easy breakFAST

If there is no time every morning to create an elaborate breakfast or if you get bored by eating always the same meal like cereals or toast and jam, here is the perfect alternative:

GREEN DREAM (only takes one minute to prepare)

  • 1 banana

  • 3 dates

  • rocket salad (even the floppy one which doesn’t taste nice in a fresh salad)

  • one slice of mango (fresh)

  • tap water

This is just delicious! Give it a go and I am 100% sure you gonna fall for this. (If you wanna take different vegetables feel free and create your own plate of joy.)

Take some cocktail tomatoes, a whole pepper, onion, pumpkin, beetroot and courgette, spice it up with salt & pepper, turmeric and curry powder (olive oil all over it!), top it with walnuts and drizzle some honey over all the veggies - this is the “icing on the cake”!

healthy ice cream? …YESSS

Here we go, the dream for every sweet tooth like me - homemade healthy ice cream:

  • frozen bananas (or every other kind of fruit you prefer - bananas are a perfect base for it tho)

  • just a little bit tap water

and mix it until it’s a lovely smooth consistency.

Then you can top it with different fruits or some nuts & honey… your choice of course!

That’s the perfect alternative to all the ordinary sorts of bread.

Ingredients:

  • 200g oats

  • 2 bananas

  • 2 teaspoons of cinnamon

  • 1 teaspoon of baking powder

  • 1small teaspoon of baking soda

  • 1 teaspoon of lemon juice (to “activate” the baking powder/soda)

  • 1 tablespoon of sugar (choose the one you prefer, I took cane sugar)

  • 1 pinch of salt

  • 200ml plant based milk (for instance almond milk)

Preheat the oven (200°), then take first the oats and put it into a blender. Blend them til the consistency is flour-like. Then add one banana, the baking powder and the b. soda, then drizzle the lemon juice on it, add the rest of the ingredients (except the other banana - this one is for decoration) and blend it. Then put the dough into a baking pan and let it set for 5mins. Now it’s ready for the oven - bake it for about 40mins.

Quinoa cracker

Quinoa is a real superfood! It is gluten-free, high in protein and one of the few plant foods that contains sufficient amounts of all nine essential amino acids. It is also high in fibre, magnesium, B vitamins, iron, calcium, vitamin E and more…
You can use quinoa just the same way as rice or mix it into a sald or try something very new: MY DELICIOUS QUINOA SEED CRACKERS

Ingredients:

50g chia seeds (soak them in water til it gets a gooey texture)
150g cooked quinoa
50g walnuts (or use just as much as you prefer and break them into small pieces)
50g sesame seed
salt & pepper & a pinch of chilli (if you like it spicy)

Put all the ingredients into a bowl and mix it. Then put the mixture on a baking plate and leave it for 45min in the oven (165°).
